Cajun food is NOT diet food, and if you try to make it into diet food, it's inedible. Ever made a decent roux without butter? Can't be done.
I LOVE Cajun food! Mmmm! Some of my favorite! But I rarely get it because of my celiac. One of my goals this year is to learn how to cook it GF. My guess is I'll need even more butter. Fine by me!

Ugh, after 22 years, my L5S1 is AFU, again. Symptoms present in the hip. X-rays revealed some unhappy fuckery in my lumbar spine.
